A peer-reviewed study of Allergy Amulet’s consumer food allergen sensor confirmed its ability to detect allergenic ingredients (in particular, soy) in foods, the company recently announced.
According to a release, for every food that was known to contain soy, the sensor correctly detected its presence at clinically relevant levels, an amount that would trigger a reaction in the most sensitive food-allergic population. The sensor was then tested against a lateral flow device (LFD), and it performed at least 10 times faster.
The study was published in Food Chemistry, one of the nation’s leading journals in food analysis and detection.
